10-Minute Vegan Burrito Wraps

Quick and flavorful vegan burrito wraps that combine creamy avocado, black beans, and spices, ready in just ten minutes.

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn, thawed or drained
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. In a bowl, mash the avocado and mix in the lime juice until smooth and creamy.
  2. Add the black beans, corn, red onion, and fresh cilantro, folding them together gently.
  3. Sprinkle in the cumin, chili powder, salt, and black pepper, mixing until just incorporated.
  4. Warm the tortillas in a skillet for about a minute on each side, just until soft.
  5. Spoon the filling onto the center of each tortilla and fold it over tightly to seal.
  6. Serve immediately, savoring the delicious aroma from each burrito.

Notes

For a creamier texture, mix in Greek yogurt or vegan sour cream. To make gluten-free, swap flour tortillas with corn tortillas.
