Best Chickpea and White Bean Soup

A warm and hearty soup filled with chickpeas and white beans, perfect for family meals and packed with protein and fiber.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can white beans, drained and rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional: spinach or kale for added greens

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  2. Add the minced garlic and cook for an additional minute.
  3. Stir in the chickpeas, white beans, vegetable broth, thyme, cumin, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for about 20-30 minutes.
  5. If desired, add spinach or kale and cook until wilted.
  6. Serve hot and enjoy your cozy soup!

Notes

For added depth, consider adding a tablespoon of lemon juice just before serving. Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
