Sheet Pan Greek Chicken & Veggies

A simple and flavorful weeknight dinner featuring tender chicken and vibrant roasted vegetables, perfect for the whole family.

  • 4 chicken breasts
  • 2 cups bell peppers, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons Greek seasoning
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the chicken breasts, olive oil, Greek seasoning, salt, and pepper.
  3. Add the sliced bell peppers, zucchini, and red onion and toss to coat.
  4. Spread the chicken and vegetables evenly on a sheet pan.
  5. Bake for 25-30 minutes or until chicken is cooked through and vegetables are tender.
  6. Serve with lemon wedges.

Notes

For a crispier chicken skin, consider broiling for the last couple of minutes. Marinating the chicken ahead of time enhances the flavors.
