Juicy French Onion Pot Roast

A comforting pot roast infused with the rich flavors of French onion soup, perfect for family gatherings.

  • 34 lbs chuck roast
  • 2 large onions, sliced
  • 1 packet of French onion soup mix
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme (optional)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the chuck roast with salt and pepper, then sear on all sides until browned.
  4. Remove the roast and add sliced onions, cooking until soft.
  5. Stir in the French onion soup mix and beef broth, scraping up browned bits.
  6. Return the roast to the pot, cover, and transfer to the oven.
  7. Cook for 3-4 hours, or until the roast is tender.
  8. Serve with pan juices and fresh thyme if desired.

Notes

For extra flavor, consider marinating the roast overnight and add a splash of red wine for richness.
