Apple Cinnamon Greek Yogurt Muffins

These delicious muffins combine Greek yogurt and fresh apples for a nutritious and comforting breakfast treat.

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup Greek yogurt
  • 1/2 cup sugar
  • 1/2 cup apple sauce
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup diced apples

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, oats, baking powder, baking soda, cinnamon, and salt until well combined.
  3. In another bowl, whisk Greek yogurt, sugar, apple sauce, and egg together until smooth and creamy.
  4. Combine the wet and dry ingredients, then gently fold in the diced apples.
  5. Pour the batter into muffin tins, filling each cup about three-quarters full.
  6. Bake for 20-25 minutes until golden brown and a toothpick comes out clean. Cool before serving.

Notes

For even fluffier muffins, add an extra tablespoon of Greek yogurt. Store in an airtight container in the fridge for up to a week.
