Apple Cinnamon Pancakes

Delicious and fluffy apple cinnamon pancakes, perfect for a cozy breakfast any day of the week.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup grated or finely chopped apples
  • Optional: maple syrup for serving

Instructions

  1. Combine flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  2. In a separate bowl, whisk together milk, egg, and melted butter until smooth.
  3. Gradually mix wet ingredients into dry ingredients, avoiding overmixing.
  4. Gently fold in the chopped apples.
  5. Heat a non-stick skillet over medium heat and coat lightly with butter or oil.
  6. Pour 1/4 cup of batter for each pancake onto the skillet.
  7. Cook until bubbles form, then flip and cook until golden brown, about 2-3 minutes per side.
  8. Serve warm with maple syrup or powdered sugar.

Notes

For added flavor, use freshly grated apples and consider adding a sprinkle of nutmeg.
