Irresistibly Delicious Avocado Toast with Egg

A quick and healthy breakfast that combines creamy avocado goodness and protein-packed eggs.

Ingredients

  • 1 teaspoon butter
  • 2 eggs
  • 2 slices multigrain bread
  • 1 ripe avocado, pitted and peeled
  • 1 teaspoon lemon juice, or to taste
  • 1 pinch cayenne pepper
  • Sea salt to taste
  • Ground black pepper to taste

Instructions

  1. Begin by melting the butter in a skillet over medium-low heat. Carefully crack the eggs into the skillet and cook until the whites firm up enough to flip—about 2 to 3 minutes.
  2. Gently flip the eggs to keep the yolk intact and cook to desired doneness—another 2 to 5 minutes.
  3. While the eggs are cooking, toast the slices of multigrain bread until golden brown, approximately 3 to 5 minutes.
  4. In a bowl, mash the avocado and stir in lemon juice, cayenne pepper, and a sprinkle of sea salt.
  5. Spread the avocado mixture on the warm toast, and top with the fried eggs. Season with additional sea salt and black pepper to taste.

Notes

Best enjoyed fresh, alongside a fruit salad or coffee. Store leftover avocado mixture separately from toast and eggs.
