Blackened Shrimp Stroganoff

  • 8 oz fettuccine or egg noodles
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the fettuccine or egg noodles according to package instructions. Drain and set aside, drizzling with olive oil to prevent sticking.
  2. Season the shrimp with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat and cook the shrimp for 2-3 minutes per side until blackened. Remove from skillet and set aside.
  3. In the same skillet, sauté onions and mushrooms for about 5 minutes. Add garlic and cook for another minute, ensuring it doesn’t brown.
  4. Pour in chicken broth and bring to a simmer. Stir in heavy cream and cook until slightly thickened, about 3-5 minutes for the perfect consistency.
  5. Add the cooked pasta and shrimp to the sauce. Toss to combine and heat through, seasoning with salt and pepper to taste.
  6. Serve hot, garnished with chopped parsley for that restaurant-worthy touch!

Notes

For deeper flavor, consider marinating shrimp in Cajun seasoning for 30 minutes before cooking.
