Blueberry Cottage Cheese Breakfast Bake

A warm and comforting breakfast bake packed with protein and bursting with juicy berries.

  • 2 cups cottage cheese
  • 4 large eggs
  • 4 tablespoons sweetener (allulose or erythritol)
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon zest
  • 2 tablespoons cornstarch (or coconut flour)
  • 1 ½ cups mixed berries (divided, blueberries preferred)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a blender, combine cottage cheese, eggs, sweetener, vanilla extract, and cornstarch; blend until smooth.
  3. Gently fold in 1 cup of mixed berries and lemon zest.
  4. Pour the mixture into the baking dish and bake for 35-40 minutes until set and golden.
  5. Let it cool for a few minutes and top with remaining berries before serving.

Notes

For an extra creamy texture, blend the cottage cheese longer. Adjust sweetener to taste.
