Broccoli Cheddar Soup

A warm and creamy Broccoli Cheddar Soup that brings comfort on crisp evenings, perfect for weeknights or special occasions.

Ingredients

  • 2 cups of broccoli florets
  • 1 cup of shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable or chicken broth
  • 1 cup of milk or cream
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Optional: cooked chicken for additional protein

Instructions

  1. In a large pot, heat the olive oil over medium heat. Toss in the chopped onion and minced garlic, sautéing until soft and translucent—about 5 minutes.
  2. Add the broccoli florets and sauté for another 2-3 minutes.
  3. Pour in the broth and bring it to a boil. Once boiling, reduce the heat and let it simmer for 10-15 minutes until the broccoli is tender.
  4. Blend the soup until smooth using an immersion blender or a regular blender.
  5. Stir in the milk or cream and shredded cheddar cheese until well combined. Season with salt and pepper to taste. Serve hot.

Notes

For an extra creamy texture, add cream cheese and try different cheeses like Gruyère for unique flavors.
