Carrot Cake Energy Balls

Delicious and nutritious Carrot Cake Energy Balls made with wholesome ingredients, perfect for a quick snack.

Ingredients

  • 1 cup medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract
  • Extra 1/2 cup shredded coconut for rolling

Instructions

  1. Add all the ingredients to a food processor and pulse until everything is well combined to a slightly sticky consistency.
  2. Using a spoon, scoop out portions of the dough and roll them into bite-sized balls.
  3. Roll each energy ball in the extra shredded coconut for a delightful finish.
  4. Place the rolled energy balls in the fridge for at least one hour to firm up before enjoying.
