  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cooked brown rice
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, brown rice, diced tomatoes, taco seasoning, salt, and pepper. Mix well.
  3. Transfer the mixture to a greased baking dish, spreading it evenly.
  4. Sprinkle shredded cheese on top.
  5. Bake for 25-30 minutes or until heated through and cheese is bubbly and golden brown.
  6. Garnish with fresh cilantro before serving.

Notes

For added flavor, consider using rotisserie chicken or adding diced bell peppers. This dish is suitable for meal prep and stores well in the refrigerator for up to three days.
