Chicken Fajitas

Bursting with flavor and perfect for quick weeknight meals, these Chicken Fajitas are sure to become a family favorite with tender chicken and colorful veggies.

  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 700g skinless chicken thighs or 2 large chicken breasts, halved horizontally
  • 2 tbsp olive oil (for cooking)
  • 3 bell peppers, deseeded and sliced
  • 1 large onion, halved and sliced thickly
  • 812 small tortillas
  • 1 large avocado, halved and sliced
  • Sour cream (optional)
  • Fresh lime wedges (for serving)

Instructions

  1. In a large bowl, combine lime juice, orange juice, 2 tablespoons of olive oil, minced garlic, cumin powder, salt, and black pepper to create the marinade.
  2. Add the chicken to the marinade and toss well to coat all pieces thoroughly.
  3. Heat 2 skillets over medium-high heat. In one skillet, cook the marinated chicken for about 7-10 minutes, turning halfway through, until it’s nicely browned and cooked through.
  4. In the second skillet, add the sliced bell peppers and onions, sautéing for about 5-7 minutes until they are tender yet crisp.
  5. Warm the tortillas in a dry skillet or microwave before serving.
  6. To serve, arrange the cooked chicken and vegetables on a large platter and set out tortillas, avocado slices, and fresh lime wedges for everyone to build their fajitas.

Notes

For extra tenderness, consider using chicken thighs. Don’t skip the marination for maximum flavor.
