Cinnamon Roll Cookies

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • For the Filling:
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. Cream the softened butter with both sugars until fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. For the filling, combine the packed brown sugar and ground cinnamon in a small bowl.
  7. Spread half of the dough on parchment paper, sprinkle with the filling mixture, and roll up tightly.
  8. Slice into rounds about 1-inch thick and place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes until the edges are golden brown.
  10. Allow to cool on a wire rack before serving.

Notes

Store in an airtight container at room temperature for up to one week. For freezing, wrap each cookie in plastic wrap and place in a freezer-safe bag.
