Cozy Chicken Sausage and Broccoli Orzo

A delightful dish combining tender orzo, chicken sausage, and vibrant broccoli in a savory broth, perfect for a quick weeknight meal.

  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage (sliced)
  • 2 cups broccoli florets
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced chicken sausage and cook for 5 to 7 minutes until nicely browned.
  3. Toss in the minced garlic and cook for another minute until fragrant.
  4. Stir in the broccoli florets and cook for 2 to 3 minutes until they just begin to soften.
  5. Add the orzo, chicken broth, Italian seasoning, salt, and pepper. Bring this mixture to a boil, then reduce the heat to a simmer. Cover and cook for 10 to 12 minutes, stirring occasionally until the orzo is tender.
  6. Remove from heat and stir in the Parmesan cheese until melted and mixed in.
  7. Garnish with fresh parsley and serve hot.

Notes

For storing leftovers, let the orzo cool before transferring it to an airtight container. It will keep well in the fridge for up to 4 days. To reheat, warm in a saucepan over low heat or use the microwave, adding a splash of broth to rehydrate.
