Cranberry Pistachio Truffles

Delicious and creamy cranberry pistachio truffles, perfect for any occasion, combining sweet and nutty flavors.

  • 8 ounces white chocolate
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pistachios, chopped
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the white chocolate in a heatproof bowl over simmering water or in the microwave, stirring until smooth and letting it cool slightly.
  2. In a separate bowl, combine the heavy cream, vanilla extract, and salt, blending until well combined.
  3. Fold the melted chocolate into the cream mixture gently until smoothly blended.
  4. Gently fold in the chopped cranberries and pistachios until well mixed.
  5. Chill the mixture in the refrigerator for about 30 minutes until firm.
  6. Once firm, roll the mixture into small balls about the size of cherries.
  7. Roll each truffle in the chopped pistachios to coat.
  8. Place the truffles on a parchment-lined tray and chill for another 30 minutes until set.
  9. Serve as a festive treat or gift them in a decorative container.

Notes

For extra flavor, try adding orange zest or a sprinkle of cinnamon. Store in an airtight container for up to a week.
