Easy, Healthy Butter Chicken

A cozy, family-friendly twist on classic butter chicken, packed with flavor and nutrition.

  • 2 lbs. boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup tomato paste
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons cumin
  • 2 teaspoons garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon canola oil
  • 1 small onion, diced
  • 5 cloves garlic, minced
  • 2 tablespoons light brown sugar
  • 1/2 cup plain Greek yogurt
  • 1/2 cup water

Instructions

  1. Place chicken cubes in a bowl or sealable plastic bag.
  2. In another bowl, mix together tomato paste, 1/4 cup yogurt, lemon juice, cumin, garam masala, ground coriander, salt, ground ginger, black pepper, turmeric, cinnamon, and cayenne pepper until well combined.
  3. Pour marinade over chicken and let it marinate for at least 30 minutes, or up to 8 hours.
  4. Heat a large skillet over medium-high heat and add canola oil. Sauté diced onion for 2-3 minutes until softened, then add minced garlic and cook for an additional minute.
  5. Add marinated chicken and all the marinade to the skillet, sprinkle brown sugar on top, and cook for another 2-3 minutes.
  6. Stir in 1/2 cup yogurt and 1/2 cup water, lower heat to medium or medium-low, and let simmer for 8-10 minutes until chicken is cooked through and sauce thickens to your liking.
  7. Season with salt and pepper to taste.
  8. Serve hot with additional sauce spooned over top.

Notes

Let the chicken marinate longer for improved flavor. Adjust cayenne for a milder heat. Use low-fat Greek yogurt for a lighter option.
