Ingredients

  • Your favorite pasta (any type you love)
  • Cherry tomatoes, halved
  • Cucumber, diced
  • Bell pepper, diced
  • Red onion, diced
  • Fresh herbs (basil, parsley, or cilantro)
  • Lemon juice
  • Tahini
  • Garlic, minced
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Cook the pasta according to package instructions, then drain and let it cool completely.
  2. In a large bowl, toss together the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, and fresh herbs.
  3. In a small bowl, whisk together the lemon juice, tahini, minced garlic, olive oil, salt, and pepper until smooth.
