Halloween Red Velvet Cupcakes

These festive red velvet cupcakes are rich in flavor and have a moist texture, perfect for any Halloween gathering.

  • 3 eggs

  • ½ cup sour cream
  • 23 teaspoons red food coloring
  • 8 ounces cream cheese
  • 4 tablespoons unsalted butter (softened)
  • 2 teaspoons vanilla extract
  • ⅛ teaspoon salt
  • 2 cups icing sugar
  • 12 Halloween Knife Icing Decorations (optional)
  • ¼ cup icing sugar
  • 3 tablespoons milk (or more)
  • 2 teaspoons red food coloring

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract and sour cream. Then mix in the red food coloring to reach your desired shade.
  5. Gradually add the dry ingredients to the wet mixture until just combined. Be careful not to over-mix.
  6. Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
  8. For the frosting, beat together the cream cheese and butter until smooth and fluffy.
  9. Add the vanilla extract, salt, and gradually mix in the icing sugar until well combined. If it’s too thick, add milk one tablespoon at a time until desired consistency.
  10. Frost the cooled cupcakes generously with the cream cheese frosting. Optionally, sprinkle with additional icing sugar or use Halloween Knife Icing Decorations for a spooky touch.

Notes

Ensure all ingredients are at room temperature for best results. Frosting warm cupcakes may cause it to melt.
