Witch Finger Cookies

These Witch Finger Cookies are a fun and delicious treat perfect for Halloween gatherings, featuring a delightful blend of almond extract and strawberry jam.

  • 1 cup butter (softened)
  • 1 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1 large egg (50 grams, out of shell)
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 2 2/3 cups flour
  • 3/4 teaspoon salt
  • 3/4 cup almonds (blanched)
  • 1/21 cup strawberry jam

Instructions

  1. In a large mixing bowl, beat together the softened butter, powdered sugar, and granulated sugar until fluffy and light.
  2. Add in the egg, almond extract, and vanilla extract, mixing until well combined.
  3. Gradually incorporate the flour and salt. Wrap the dough in plastic wrap and refrigerate for about 40 minutes or up to 2 days.
  4. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  5. Roll the dough into finger shapes, making them a bit longer than usual for shrinkage.
  6. Press an almond onto the tip of each cookie and squeeze in the middle to create knuckles, using a knife to incise wrinkles.
  7. Place the fingers on the baking sheet, leaving about an inch of space between them, and bake for 17 to 22 minutes.
  8. Once baked, let them cool, then remove the almonds, fill with strawberry jam, and replace the almonds.
