Spooky Cake Ball Brains

Delightfully creepy cake bites filled with a sweet surprise, perfect for Halloween gatherings.

Ingredients

  • 1 baked chocolate cake (9 x 13-inch sheet cake or 2 8-inch round cakes)
  • 1/41/2 cup vanilla frosting
  • 3038 ounces melted white candy melts or melted and tempered pure white chocolate
  • Optional: black, pink, or green oil-based candy coloring
  • 2/3 cup cherry, raspberry, or strawberry preserves or dessert sauce
  • Red liquid food coloring

Instructions

  1. Cut off the edges of the chocolate cake and discard.
  2. Break the remaining cake into pieces and place in a mixing bowl or stand mixer.
  3. Add about 1/4 cup vanilla frosting and mix until it holds together like a soft ball; add more frosting if too crumbly.
  4. If desired, stir in a few drops of oil-based candy coloring into the white chocolate.
  5. Spoon melted white chocolate into brain mold cavities and coat evenly.
  6. Freeze for 5 minutes (with candy melts) or refrigerate for 15 minutes (with pure white chocolate).
  7. Prepare fruit preserves by stirring a few drops of liquid food coloring into them and strain out any fruit pieces.
  8. Spoon about 3/4 teaspoon of colored fruit filling into each brain cavity.
  9. Scoop around 2 tablespoons of cake ball mixture and press it into the cavity, leaving room for another layer of chocolate.
  10. Top off with more melted white chocolate, smoothing it over the cake filling.
  11. Freeze for 5 minutes (with candy melts) or refrigerate for 10 minutes (with pure white chocolate).
  12. Gently unmold the brainy creations.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to a month.
