Crispy Baked Chicken Thighs

Deliciously crispy and flavorful baked chicken thighs that are easy to prepare and perfect for family dinners.

  • 8 chicken thighs (bone-in, skin-on)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 ½ teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and let the chicken thighs sit at room temperature for about 15 minutes.
  2. Pat the chicken dry with a paper towel.
  3. In a small bowl, whisk together garlic powder, onion powder, paprika, oregano, thyme, salt, and pepper.
  4. Toss the chicken with olive oil and about two-thirds of the spice mix, coating each piece completely.
  5. Place the chicken thighs skin-side up on a rack set over a baking sheet and sprinkle the remaining spice mix on top.
  6. Bake for 35 to 40 minutes, or until the internal temperature reaches 170°F (77°C). Turn on the top broiler for 2 to 3 minutes for a golden crust.
  7. Let the chicken rest for about 5 minutes before serving.

Notes

Use a rack for baking to ensure crispy skin and allow chicken to reach room temperature before cooking for even results.
