Crockpot Cheeseburger Soup

A comforting slow-cooked soup featuring ground beef, diced vegetables, and a rich creamy broth topped with cheese.

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 3 cups potatoes, diced
  • 1 cup carrots, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cheddar cheese, shredded
  • 1/2 cup heavy cream
  • Optional toppings: croutons, diced pickles, chopped green onions

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked; drain excess fat.
  2. In the crockpot, combine the beef, onion, garlic, beef broth, potatoes, carrots, oregano, salt, and pepper; stir well.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  4. In the last 30 minutes, stir in the cheddar cheese and heavy cream; let it melt.
  5. Serve hot, topped with optional croutons, pickles, or green onions.

Notes

For extra flavor, sauté onions and garlic after removing beef, or add Worcestershire sauce and spices as desired. This soup is freezer-friendly for up to three months.
