  • 1 lb thinly sliced ribeye or sirloin beef
  • 8 oz provolone cheese, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 medium sweet onion, chopped
  • 2 tbsp extra virgin olive oil
  • 4 low-carb tortillas

Instructions

  1. Slice the beef into thin strips and chop the bell peppers and onion.
  2. Heat olive oil in a skillet over medium heat. Add the chopped onions and peppers, sautéing for 5-7 minutes until softened.
  3. Increase the heat to medium-high and add the sliced beef; season lightly with salt and pepper. Cook until browned, around 3-5 minutes.
  4. Reduce the heat back to low and place the provolone slices over the beef mixture, allowing them to melt completely.
  5. Spoon the beef and cheese mixture onto each tortilla and roll them up tightly.
  6. In the same skillet, return the roll-ups seam-side down, cooking until golden brown on all sides, approximately 3-4 minutes total.

Notes

For easier slicing, freeze the beef for about 30 minutes before cutting. Feel free to use other cheese varieties like mozzarella or sharp cheddar. Experiment with added ingredients like mushrooms or jalapeños to customize your roll-ups.
