Chocolate Mousse Brownies

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Melt the butter in a saucepan over low heat, stirring in the sugar until glossy, then remove from heat.
  3. Add eggs and vanilla to the butter mixture, mixing until combined.
  4. Sift together flour, cocoa powder, and salt in a separate bowl.
  5. Gradually fold dry ingredients into the wet mixture, avoiding overmixing.
  6. Pour brownie batter into the prepared dish and spread evenly.
  7. Bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
  8. Let the brownies cool on a wire rack.
  9. In a separate bowl, whip the heavy cream until soft peaks form.
  10. Gently fold in melted chocolate chips and powdered sugar until combined.
  11. Spread the mousse over the cooled brownies and chill in the refrigerator for 2 hours.
  12. Cut into squares and enjoy.
