Easy Crockpot Cheesy Chicken Broccoli Rice

A comforting and creamy dish featuring tender chicken, vibrant broccoli, and fluffy rice, all cooked in a crockpot.

  • 2 cups cooked rice
  • 2 cups broccoli florets
  • 1 lb boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. In a mixing bowl, combine the cream of chicken soup with the chicken broth, stirring until smooth, then pour this mix over the chicken.
  3. Layer the cooked rice and fresh broccoli florets on top, spreading them evenly.
  4. Season with salt and pepper to taste.
  5. Cover the pot and cook on low for about 4-6 hours, or until the chicken is tender and cooked through.
  6. Just before serving, stir in the shredded cheddar cheese until melted.

Notes

For quicker prep, use leftover rotisserie chicken. Add garlic for extra flavor, or crushed red pepper flakes for a kick.
