Easy Healthy Broccoli Pasta

A quick, nutritious pasta dish featuring vibrant broccoli, perfect for busy weeknights.

Ingredients

  • 8 oz pasta (any type)
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh lemon juice (to taste)

Instructions

  1. Cook the pasta according to the package instructions until al dente.
  2. In the last 3 minutes of cooking, toss in the broccoli florets.
  3. Drain the pasta and broccoli, saving about 1/2 cup of pasta water.
  4. Return the pot to the heat, add olive oil, and sauté minced garlic and red pepper flakes for about 1 minute.
  5. Mix the cooked pasta and broccoli back into the pot, adding reserved pasta water.
  6. Toss until well combined and vibrant green.
  7. Season with salt, pepper, and sprinkle with grated Parmesan cheese.
  8. Add fresh lemon juice to taste just before serving.

Notes

For extra flavor, roast the broccoli before adding. You can also experiment with different pasta types.
