Ingredients

Scale
  • 1 pound spicy Italian ground sausage
  • 4 tablespoons butter
  • ½ white onion (diced)
  • 1 tablespoon minced garlic
  • 6 cups chicken broth
  • 2 cups water
  • 45 yellow potatoes (cut into 1-inch pieces)
  • 3 teaspoons salt (or to taste)
  • 1 teaspoon black pepper
  • 2 cups heavy cream
  • 4 cups chopped kale
  • Chopped bacon or bacon bits (optional for garnish)
  • Grated Parmesan cheese (optional for garnish)

Instructions

  1. Sauté the ground sausage in a large pot over medium heat for 5-6 minutes until browned. Transfer to a plate and set aside.
  2. Melt the butter in the same pot, add diced onions, and sauté until translucent.
  3. Add minced garlic and sauté for an additional minute.
  4. Pour in the chicken broth and water, then add diced potatoes, salt, and pepper. Bring to a boil and cook until the potatoes are tender.
  5. Stir in chopped kale and heavy cream, then add the cooked sausage back into the pot. Adjust seasoning if necessary.
  6. Dish out the soup into bowls and garnish with grated Parmesan cheese and bacon bits if desired.

Notes

For a thicker soup, mash some of the potatoes in the pot before adding kale and cream. Leftovers can be stored in an airtight container for 3-4 days.
