Delicious Mediterranean Chicken Dinner

A cozy Mediterranean Chicken Dinner featuring tender chicken, zesty lemon, and wholesome veggies, all cooked in one pan for easy cleanup.

Ingredients

  • 1 kg / 2 lb bone-in, skin-on chicken thighs and drumsticks
  • 1/2 cup (125 ml) lemon juice
  • 6 cloves garlic, minced
  • 2 tsp Dijon mustard (optional)
  • 2 tbsp honey or 1 tbsp sugar (or maple or other sweetener)
  • 1 tbsp dried oregano
  • 1.5 tsp paprika
  • 1 tbsp olive oil
  • 1/2 tsp each salt and pepper
  • 5 small potatoes, quartered
  • 2 red onions, quartered
  • 1 cup (250 ml) low sodium chicken broth/stock
  • 250 g / 8 oz cherry tomatoes
  • Fresh oregano (for garnish, optional)

Instructions

  1. In a bowl, mix together all the marinade ingredients—lemon juice, garlic, Dijon mustard, honey, oregano, paprika, olive oil, salt, and pepper. Add the chicken, tossing to coat evenly. Marinate for 24 hours if possible.
  2. Preheat your oven to 180°C (350°F).
  3. In a baking pan, layer the quartered potatoes and onions. Place the chicken on top, then pour the chicken stock and the marinade over everything.
  4. Bake for 20 minutes. Carefully remove the pan from the oven, scatter the cherry tomatoes over the chicken, and drizzle with an extra tablespoon of olive oil, adding a pinch of salt and pepper.
  5. Return the pan to the oven and continue baking for another 30-35 minutes, or until the chicken is golden and the potatoes are tender.
  6. Garnish with fresh oregano before serving.

Notes

For optimal flavor, marinate the chicken the night before. Feel free to add vegetables like bell peppers or zucchini for extra nutrition.
