Eggs Napoleon

A comforting dish featuring flaky puff pastry filled with creamy spinach and topped with perfectly baked eggs.

  • 1 sheet puff pastry
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface to about 1/8 inch thick, and cut into circles for your pastry shells.
  3. Place the pastry circles on a baking sheet and bake for 12-15 minutes until golden and flaky.
  4. Meanwhile, heat olive oil in a skillet over medium heat and sauté the spinach until wilted.
  5. Stir in cream cheese into the spinach, mixing until smooth.
  6. In a bowl, whisk together the eggs with salt and pepper.
  7. Fill each pastry shell with the spinach mixture and pour the egg mixture on top.
  8. Sprinkle grated Parmesan cheese over each filled shell.
  9. Return to the oven and bake for another 15-18 minutes or until eggs are set and tops are golden.
  10. Garnish with herbs before serving warm.

Notes

For added flavor, consider sautéing some onions or garlic with the spinach. Avoid overcooking the eggs to ensure they remain tender.
