Freakin’ Fantastic Fried Rice

A heartwarming fried rice dish that combines cold rice, butter, veggies, and eggs for a delightful meal.

  • 4 cups cold, cooked rice
  • 3 tablespoons butter
  • 1 onion, diced
  • 12 oz frozen peas and carrots
  • 1/2 cup soy sauce
  • 3 eggs, beaten

Instructions

  1. Heat the butter in a large skillet over medium heat until sizzling. Add the diced onions and cook until translucent.
  2. Toss in the frozen peas and carrots, stirring until heated through.
  3. Incorporate the cold, cooked rice, and pour in the soy sauce, stirring gently.
  4. Push the rice to one side and pour the beaten eggs on the other side, scrambling until set and then mixing into the rice.
  5. Garnish with cut green onions or sesame seeds if desired.

Notes

Using cold, day-old rice makes a big difference to avoid sogginess. For extra flavor, add oyster sauce, and try different veggies for variety.
