Garlic Butter Chicken and Broccoli

A quick and delicious family-friendly meal featuring tender chicken, vibrant broccoli, and rich garlic butter sauce, ready in just 20 minutes.

  • 2 medium chicken breasts (or 1 pound)
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1 tablespoon olive oil
  • 1/4 cup butter (divided)
  • 34 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper
  • 34 cups broccoli florets (or broccolini)
  • 1/4 cup water or chicken stock
  • 1 tablespoon lemon juice (or juice of 1/2 lemon)

Instructions

  1. Cut the chicken breasts in half horizontally to create 4 pieces. Season both sides of each piece with salt, garlic powder, black pepper, and chili powder.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 2 tablespoons of butter and the seasoned chicken. Sear for 4-5 minutes on each side until browned and cooked through.
  3. Remove the chicken and set aside. In the same pan, add the remaining 2 tablespoons of butter, minced garlic, Italian seasoning, and crushed red pepper. Stir for 1 minute until fragrant.
  4. Add broccoli, water or chicken stock, and lemon juice. Cook for 2-3 minutes until the broccoli brightens and becomes tender.
  5. Return the chicken to the pan, ensuring it’s nestled among the broccoli. Serve immediately and enjoy!

Notes

Serve with steamed rice, creamy mashed potatoes, or crusty bread. Store leftovers in an airtight container for up to 3 days.
