Turmeric Chicken Soup

A cozy and nutritious Turmeric Chicken Soup packed with anti-inflammatory benefits from turmeric and fresh ingredients for a comforting meal.

  • 1 tbsp olive oil
  • 1/2 white onion (diced)
  • 1 garlic clove (minced or diced)
  • 1 chicken breast (if larger, cut into two strips)
  • 1 celery stick (diced)
  • 2 medium carrots (diced)
  • 1/2 zucchini (diced)
  • 2 cups kale (stems removed and diced)
  • 4 cups chicken or vegetable broth
  • 1 tsp turmeric
  • 1/2 tsp sweet paprika
  • 1 cm fresh ginger (grated)
  • Small handful parsley (for garnish)
  • Pinch salt
  • Pinch black pepper (optional)

Instructions

  1. In a pot, heat the olive oil over medium heat. Sauté the diced onion and garlic until softened, approximately 5-6 minutes.
  2. Stir in the grated ginger, turmeric, and sweet paprika, letting them fry together for about one more minute.
  3. Add the diced celery, carrot, and zucchini to the pot, cooking for an additional 2-3 minutes.
  4. Use tongs to add the chicken breast and pour in the broth. Bring everything to a boil, then reduce heat to a gentle simmer for 30 minutes.
  5. After the chicken has cooked through, carefully remove it from the pot. Shred the chicken with a fork and return it to the soup.
  6. Incorporate the kale, and season with salt and pepper if desired. Allow the soup to simmer lightly for another 2-3 minutes.
  7. Ladle the soup into bowls and enjoy the warmth that fills your home!

Notes

This soup is best served with crusty bread or fluffy biscuits. A splash of lemon juice just before serving enhances the flavor.
