Healthy Baked Churro Bites

These Healthy Baked Churro Bites offer a deliciously crispy exterior and a soft center, perfect for a guilt-free snack.

  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 tbsp melted coconut oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the whole wheat flour, baking powder, salt, and coconut sugar.
  3. In another bowl, combine the unsweetened applesauce, almond milk, vanilla extract, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  5. Spoon the batter into mini muffin tins, filling each cup about two-thirds full.
  6. Bake for about 15-18 minutes, or until golden brown.
  7. Once baked, roll the churro bites in a mixture of cinnamon and sugar.
  8. Allow them to cool slightly on a wire rack.

Notes

For extra flavor, add a pinch of nutmeg or customize with nuts or chocolate chips.
