Healthy Candy Corn Parfaits

A colorful and nutritious layered parfait made with cottage cheese, pineapple, and mandarin oranges, perfect for autumn celebrations.

Ingredients

  • 2 cups cottage cheese (2% preferred)
  • 1/3 cup pure maple syrup
  • 3 cups pineapple (chopped)
  • 2 cans mandarin oranges (10.5 ounces each, drained)
  • Candy corns for garnish (optional)

Instructions

  1. Place the cottage cheese in a food processor and blend for about 30 seconds. Scrape down the sides and blend again until smooth.
  2. Add the maple syrup and pulse until thoroughly combined.
  3. In a clear glass jar or bowl, layer 1/2 cup of chopped pineapple at the bottom.
  4. Add a layer of mandarin oranges on top of the pineapple.
  5. Finish with a dollop of the whipped cottage cheese and sprinkle candy corns on top for garnish.

Notes

For added flavor, consider sprinkling cinnamon or nutmeg in the cottage cheese before blending. You can substitute fruits based on seasonality.
