Mummy Granola Bars

Delightful Mummy Granola Bars filled with wholesome ingredients, perfect for Halloween.

Ingredients

  • 2 cups old fashioned rolled oats
  • ½ teaspoon fine sea salt
  • ½ cup honey
  • ½ cup all-natural peanut butter
  • ¾ cup dark chocolate chips
  • ½ cup dried coconut chips (optional)
  • Candy eyes, blueberries, or any other toppings (optional)

Instructions

  1. In a large bowl, combine the rolled oats and salt, mixing them well.
  2. In a small saucepan, add the honey and heat over medium-high until it reaches a boil, then set a timer for 1 minute.
  3. When the timer goes off, take the pan off the heat and stir in the peanut butter until fully combined.
  4. Pour the peanut butter and honey mixture into the bowl of rolled oats and stir until evenly coated.
  5. Press the mixture into the bottom of an 8-inch square pan lined with parchment paper.
  6. Place the pan in the fridge or freezer to cool faster; once cooled, slice into 10 to 12 bars.
  7. Melt the chocolate chips using a double boiler or microwave, then spread it over each bar.
  8. While the chocolate is still wet, sprinkle coconut chips on top to mimic mummy wrappings and decorate with candy eyes, blueberries, or other toppings.
  9. Let the chocolate firm up completely before enjoying!
