High Protein Chicken Crunch Wrap Supreme

A delicious and wholesome wrap filled with protein-rich ingredients and a satisfying crunch.

Ingredients

  • 2 whole wheat tortillas
  • 1 cup cooked chicken, shredded
  • 1/2 cup Greek yogurt
  • 1 cup fresh spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup lettuce, shredded
  • 1/4 cup salsa
  • Salt and pepper, to taste
  • 1/4 cup tortilla chips, crushed

Instructions

  1. In a bowl, combine the shredded chicken, Greek yogurt, spinach, bell peppers, cheese, and salsa. Season with salt and pepper to taste.
  2. Lay one tortilla flat and spread half of the chicken mixture in the center.
  3. Top with a handful of crushed tortilla chips, lettuce, and additional salsa if desired.
  4. Carefully fold in the sides of the tortilla, then roll it up from the bottom to the top to form a wrap.
  5. Repeat the process with the second tortilla.
  6. Grill the wrap on a skillet for 2-3 minutes on each side until golden brown.
  7. Slice in half and serve immediately, or wrap in foil for meal prep.

Notes

To keep your wraps fresh, store leftovers in an airtight container in the refrigerator for up to three days. You can also freeze them individually for up to a month.
