High-Protein Egg Bites

Delicious and nutritious baked egg bites packed with protein and flavor, perfect for breakfast or a snack.

Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup diced vegetables (bell peppers, spinach, onions, or your choice)
  • 1/2 cup shredded cheese (cheddar or feta)
  • Salt and pepper to taste
  • Optional: cooked bacon or sausage, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and cottage cheese until smooth and fluffy.
  3. Stir in the diced vegetables and shredded cheese.
  4. If using, fold in the chopped bacon or sausage.
  5. Grease a muffin tin and pour the egg mixture evenly into each cup, filling them about 2/3 full.
  6. Bake for 20 to 25 minutes, until set and golden.
  7. Let cool slightly before removing from the tin.

Notes

For extra fluffiness, add an extra egg white. Experiment with different cheeses and spices to customize flavor.
