Homemade Blueberry Protein Muffins

Wholesome blueberry protein muffins that are soft, fluffy, and perfect for breakfast or snacks.

  • 10 oz fresh blueberries
  • 1 cup plain flour
  • 3/4 cup thick Greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder

Instructions

  1. Preheat your oven to 360°F (180°C).
  2. In a large mixing bowl, combine the egg, honey, Greek yogurt, vanilla extract, and olive oil. Whisk until smooth.
  3. Gently add the plain flour, protein powder, baking powder, and baking soda. Stir just until combined.
  4. Fold in the fresh blueberries.
  5. Spoon the batter into a lined muffin pan to distribute evenly for 12 muffins.
  6. Bake for 15-20 minutes, until a toothpick inserted in the center comes out clean.
  7. Cool in the pan briefly, then transfer to a wire rack to cool completely.

Notes

For extra moist muffins, substitute half of the oil with applesauce or mashed banana. Store in an airtight container in the refrigerator for up to a week.
