Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 3/4 cup milk
  • 1 pound chicken tenders
  • 1 cup buttermilk
  • 1 cup breadcrumbs
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Oil for frying
  • 1/2 cup honey
  • 12 tablespoons hot sauce (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix the flour, baking powder, and salt. Cut in the cold butter until it resembles coarse crumbs. Pour in the milk and mix until combined.
  3. Roll out the dough on a floured surface and cut into biscuit shapes. Place on a lined baking sheet.
  4. Bake for 12-15 minutes or until golden brown.
  5. Marinate the chicken tenders in buttermilk for 30 minutes.
  6. In a shallow dish, combine breadcrumbs with paprika and cayenne. Dredge the chicken tenders in the mixture.
  7. Heat oil in a skillet over medium heat and fry the chicken until golden brown, about 8-10 minutes.
  8. In a small saucepan, warm honey and hot sauce until blended.
  9. Serve the fried chicken on top of the biscuits and drizzle with hot honey sauce.

Notes

Use a pastry cutter to cut in the butter for better texture. Adjust hot sauce levels to taste.
