Hot Honey Ground Beef Bowls

Delicious and satisfying Hot Honey Ground Beef Bowls made with sweet potatoes, lean beef, and a sweet kick from hot honey.

Ingredients

  • 1 1/2 lbs sweet potato, peeled and diced into ~1/4″ cubes
  • Salt and pepper to taste
  • Cinnamon (to taste)
  • 1 lb 93/7 lean ground beef
  • 1 tbsp tomato paste
  • 1 tbsp taco seasoning
  • 2 cups 2% low-fat cottage cheese
  • 4 small avocados
  • 2 tbsp hot honey

Instructions

  1. Preheat your oven to 425°F (220°C) and line a half baking sheet with parchment paper.
  2. Toss the diced sweet potatoes with a light spray of cooking oil and season with salt, pepper, and a dash of cinnamon.
  3. Roast the sweet potatoes for about 30 minutes, flipping them halfway through.
  4. While the sweet potatoes are baking, heat a frying pan over medium-high heat and add the ground beef, breaking it up. Cook until browned, approximately 5 minutes, and drain any excess liquid.
  5. Stir in the tomato paste, taco seasoning, and a splash of water. Let it simmer for 1-2 minutes, then remove from heat.
  6. To assemble your bowls, layer sweet potatoes, taco beef, cottage cheese, and slices of avocado. Drizzle with hot honey and enjoy!

Notes

Don’t skip the cinnamon on the sweet potatoes; it adds warmth. Adjust the hot honey amount to suit your spice tolerance.
