  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. In a bowl, whisk together the flour, baking soda, salt, and cinnamon until well mixed.
  3. In another bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing in the vanilla extract after each egg.
  5. Gradually stir in the dry ingredients until just combined, being careful not to overmix.
  6. Fold in the grated apples and chopped walnuts, if you’re using them, for added texture.
  7. Pour the batter into the prepared pan, spreading it evenly.
  8. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool completely in the pan on a wire rack.
  10. For the frosting, beat the cream cheese and butter until smooth, then gradually add the powdered sugar and vanilla until creamy.
  11. Spread the cream cheese frosting over the cooled cake, cut into slices, and serve.

Notes

For a richer flavor, try using brown sugar instead of granulated sugar. Make sure to use freshly grated apples for the best moisture and flavor.
