Ingredients

Scale
  • 1 cup plain yogurt (preferably Greek yogurt)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 4 large eggs, separated
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar (optional)
  • 1/2 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract (for whipped topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan with parchment paper.
  2. In a large mixing bowl, whisk together yogurt, vegetable oil, and vanilla extract. Add egg yolks and granulated sugar, stirring until smooth.
  3. In another bowl, sift together flour, baking powder, and salt, then gradually add to the wet mixture, stirring gently.
  4. In a clean bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add a tablespoon of sugar and whisk until stiff peaks form.
  5. Fold the egg whites gently into the batter in two or three additions.
  6. Pour the mixture into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. For the whipped topping, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  9. Once cooled, spread whipped cream over the cake and serve with fresh berries or powdered sugar.

Notes
