2 salmon fillets
1 cup orzo pasta
1 lemon (juiced and zested)
2 tablespoons olive oil
2 cups vegetable or chicken broth
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper, searing each side for 4-5 minutes until cooked through. Remove from heat and set aside.
In the same skillet, toast the orzo pasta for 1-2 minutes until lightly golden. Pour in the broth, bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes until orzo is tender.
Stir in lemon juice and zest, return salmon to the skillet, and warm together for an additional minute. Garnish with fresh parsley before serving.
