Mediterranean Salmon with Lemon Orzo

A comforting dish featuring grilled salmon and creamy lemon orzo, perfect for family dinners.

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 1 lemon (juiced and zested)
  • 2 tablespoons olive oil
  • 2 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper, searing each side for 4-5 minutes until cooked through. Remove from heat and set aside.
  2. In the same skillet, toast the orzo pasta for 1-2 minutes until lightly golden. Pour in the broth, bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes until orzo is tender.
  3. Stir in lemon juice and zest, return salmon to the skillet, and warm together for an additional minute. Garnish with fresh parsley before serving.

Notes

Perfect for weeknight dinners or brunch. Can be stored in the fridge for up to 3 days and frozen for a month.
