Monster Cookies

Delightful Monster Cookies are a whimsical blend of peanut butter, chocolate, and oats, filled with M&M’s and chocolate chips for a chewy treat.

  • 1/2 cup (112g) unsalted butter, room temperature
  • 1/2 cup (125g) creamy peanut butter
  • 3/4 cup (150g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 tsp vanilla extract
  • 2 tsp molasses
  • 1 large egg
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 1/4 cup (125g) quick oats
  • 1 cup (130g) all-purpose flour or 1-to-1 gluten-free baking flour
  • 1 cup (185g) M&M’s
  • 1 cup (185g) semisweet chocolate chips
  • Flaky sea salt, for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat together the softened butter and peanut butter until creamy and smooth.
  3. Add the brown sugar and granulated sugar, mixing until well combined.
  4. Stir in the vanilla extract, molasses, and egg, mixing until fully incorporated.
  5. In another bowl, whisk together the baking soda, kosher salt, oats, and flour until blended.
  6. Gradually add the dry ingredients to the wet ingredients, mixing well.
  7. Fold in the M&M’s and chocolate chips until evenly distributed.
  8. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, leaving a little space between them. If desired, sprinkle flaky sea salt on top.
  9. Bake for 10-12 minutes or until the edges are lightly golden but the centers are still soft. Let them cool on the baking sheets for a few minutes before transferring to a cooling rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for longer storage.
