Overnight Croissant Breakfast Casserole

A warm and comforting overnight casserole featuring layers of croissants, eggs, and cheese, perfect for breakfast or brunch.

  • 4 large croissants, torn into pieces
  • 6 large eggs
  • 2 cups milk
  • 1 cup shredded cheese (e.g., Swiss or cheddar)
  • ½ cup cooked turkey breast, diced (optional)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Grease a 9×13 inch baking dish with butter or cooking spray and lay the torn croissant pieces evenly in the dish.
  2. In a large bowl, whisk the eggs, milk, sugar, vanilla extract, cinnamon, salt, and pepper until well combined.
  3. Pour the egg mixture over the croissant pieces and gently press them down to soak.
  4. Sprinkle shredded cheese over the top and add diced turkey if using.
  5. Cover with plastic wrap and refrigerate overnight.
  6. Preheat the oven to 350°F (175°C) in the morning.
  7. Remove plastic wrap and bake for 30-35 minutes until golden on top.
  8. Let cool slightly and garnish with fresh parsley before serving.

Notes

Leftovers can be stored in the refrigerator for up to 3 days. For freezing, cover tightly with plastic wrap and foil.
