Adorable Mini Pancakes

Delightful bite-sized pancakes perfect for a cozy morning, ready to be devoured with milk and toppings.

  • 1/2 cup all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup buttermilk (sub with regular milk if needed)
  • 1.5 tbsp whisked egg
  • Oil for the pan

Instructions

  1. In a mixing bowl, whisk together the flour, baking powder, baking soda, and sugar.
  2. Add the freshly whisked egg and buttermilk, gently combining everything with a fork.
  3. Pour the pancake batter into a squeeze bottle or ziplock bag.
  4. Heat a non-stick pan over medium-low heat, brushing with oil.
  5. Squeeze out mini pancake batter about the size of a quarter and cook until bubbles form on the surface.
  6. Flip the pancakes carefully and cook for another 30 seconds to a minute.
  7. Serve with a pat of butter and a drizzle of warm syrup.

Notes

For extra fluffiness, let batter rest for 5-10 minutes. Feel free to experiment with flavors like vanilla or cinnamon.
