Chicken Pesto Pasta

A quick and delicious chicken pesto pasta that comes together in just 30 minutes, featuring tender chicken, a creamy pesto sauce, and al dente pasta.

  • 8 ounces uncooked pasta (penne)
  • 1/2 tablespoon olive oil
  • 2 chicken breasts (cut into bite-size strips)
  • 1 cup pesto (store-bought or homemade)
  • 1 cup heavy/whipping cream
  • Salt & pepper (to taste)
  • Freshly grated parmesan cheese (optional, to taste)

Instructions

  1. Boil a large pot of salted water and cook the pasta according to package directions until al dente.
  2. In a skillet, heat olive oil over medium-high heat and add chicken strips. Sauté for 3-4 minutes until chicken is no longer pink.
  3. Pour in the pesto and cream, stirring well. Let it simmer for about 5 minutes.
  4. Drain the cooked pasta and add it to the skillet, tossing to coat in the creamy sauce.
  5. Season with salt and pepper, and sprinkle with parmesan cheese if desired.

Notes

For thicker sauce, add more heavy cream or a splash of pasta water. Try adding pine nuts or toasted walnuts for crunch.
