Salted Caramel Apple Pie Cheesecake

A delightful dessert combining the rich flavors of cheesecake with the comforting essence of apple pie, drizzled with salted caramel.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 tsp sea salt (for caramel)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press into a 9-inch springform pan. Bake for 10 minutes and let cool.
  3. Toss sliced apples with brown sugar, cinnamon, and flour. Spread over cooled crust.
  4. Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time. Mix in vanilla and sour cream until combined.
  5. Pour cheesecake mixture over apple layer and smooth the top.
  6. Bake for 60-70 minutes, until the center is slightly wobbly. Let cool completely, then refrigerate for at least 4 hours or overnight.
  7. For caramel, melt 1 cup sugar until amber, add 6 tablespoons butter until melted, then slowly stir in heavy cream and sea salt.
  8. Drizzle cooled caramel over chilled cheesecake before serving.

Notes

Serve chilled with whipped cream or vanilla ice cream. Store leftovers in the refrigerator for up to 5 days or freeze for longer storage.
