Simple Egg and Ricotta Toast

A quick and comforting egg and ricotta toast perfect for brunch or light dinner.

Ingredients

  • 2 slices of bread (your choice)
  • 2 eggs (free-range recommended)
  • 1/4 cup ricotta cheese (fresh is best)
  • Salt and pepper to taste
  • Olive oil (for frying)
  • Fresh herbs (optional)

Instructions

  1. Toast the bread until golden brown.
  2. Heat olive oil in a pan over medium heat and crack the eggs into the pan, cooking them sunny-side up or over-easy.
  3. Spread the ricotta cheese onto the warm, toasted bread.
  4. Place the cooked eggs on top of the ricotta toast.
  5. Season with salt and pepper, and add fresh herbs if desired. Serve warm.

Notes

For added freshness, stir a pinch of lemon zest into your ricotta. Consider adding spicy elements like red pepper flakes for a kick.
